Bio-protect grape juices & musts

We offer several options to protect grape musts directly following crushing.

PRELUDE™, our selected strain of Torulaspora delbrueckii, is renown as offering excellent protection during cold soaking or pre-alcoholic fermentation maceration. Our malolactic product, NOVA™, also helps protect musts against molds or acetic-acid bacteria such as Acetobacter and Gluconobacter at very early stage, when the must can be easily spoiled by these microbes.
