Chr. Hansen's culture range for meat products is composed of thoroughly researched strains with specific characteristics. All strains are tested for their safety for humans. Our laboratories supervise and control the pure strain production for the primary inoculation material (PIM) as well as the direct inoculation material (DIM). Both materials are extremely important for the pure strain production process in the blending procedure. These standardized and very stable strains are the basis of the highly repeatable performance of our meat culture blends.
The innovative edge of our product range has its foundation in our R&D team of scientists and technicians, who work with our application technologists to develop new strains for very focused meat applications. Examples are bioprotection for food products, or health promoting meat products created with the help of probiotic cultures.
Our research team is working on projects that will widen the field of microbiological applications in the area of food safety. The natural products developed will provide the meat industry, and food industry in general, with new innovative solutions.
