Lutein is obtained from marigold flowers, Tagetes erecta, found abundantly throughout Mexico.
Lutein is a warm, yellow color and is used in products such as juices and cakes. The color displays good light, heat and pH stability.
The pigment is also used in functional foods, being favored for its antioxidant properties.
