Thanks to new know-how, hard work and the meat culture Bactoferm CS-299 from Chr. Hansen, a team of experts from Fleury Michon, the leading French ham producer, has developed a natural process of cooking ham “sans conservateur” ? without food preservatives.

French Ham “Sans Conservateur”

Normally, nitrites are used in products such as cured meats or sausages to prevent this type of food from "going bad" during the production process and to avoid microbiological contamination by bacteria like C. botulinum.

“We, on our end, wanted to find the solution in nature, in plants that could naturally preserve our ham and at the same time enhance its color and taste,” explains Mr. Gérard Jeanot, R&D Manager in the Meat Process Division at Fleury Michon.

“We talked to Chr. Hansen’s people in France who introduced us to a meat culture that could do the job. Consequently, talks turned into a fruitful collaboration which has resulted in our new “preservative-free” product line, which utilizes natural aromatic plants and spices like carrots, celery, onions and leeks.”

Product quality and safety hold high priority at Fleury Michon. Therefore, the company does not only conduct more than 50,000 bacteriological analyses each year; suppliers are also selected with the utmost care.
