Existing micro-emulsion coloring solutions can give producers of transparent beverages a hard time due to an unpleasant side effect of off-taste. The two new Chr. Hansen natural colors utilise the latest advancements in emulsion technology to overcome these challenges.
“Many current transparent natural colors based on emulsions give off-taste when the dosage is increased to achieve strong vivid colors,” explains Ji Hoong Too, Product Manager, Chr Hansen. “This has hindered many customers who operate in markets with a consumer preference for vibrant colors from making visually satisfactory beverages using natural colors. The new ColorFruit® colors will enable these markets to meet consumer demand.”
Further benefits of the ColorFruit® Yellow 401 WSS and the ColorFruit® Green 802 WSS are increased stability throughout shelf-life, excellent transparency and less foaming during processing so easier for producers to handle during processing and filling.
Comes in many shades
The ColorFruit® range now covers the dark orange to yellow spectrum as well as green shades. Based on natural sources such as paprika, lutein and beta-carotene they represent an excellent natural alternative to the much-debated artificial colorants Sunset Yellow, Tartrazine and Quinoline Yellow. Chr. Hansen estimates that more than 40% of the world’s transparent beverages are colored orange, yellow or green.
